Job description: Hotel Arts Group is a locally owned boutique hotel group that operates 2 hotels, 3 restaurants, and a large events and catering business.

Hotel Arts has recently partnered with SAIT and their Begin Dining Tower. This is a centre for student residence of SAIT and ACAD. This position will be based out of 151 Dr Carpenter Cir NW, Calgary, AB at the SAIT Polytechnic Campus.

The dining hall is open 7 days a week from 7am – 9pm during normal SAIT semesters and modified in off season times. It is a cafeteria style service with daily short order offerings and a small grab & go selection.

Hotel Arts Group is striving to redefine the stereotypical student residence dining environment by offering comforting and relatable food to make students and staff feel at ease. We will feature a contemporary menu representing various cultures and their cuisines. Nutrition is also an important element to what will be offered.

The Dining Hall Chef is responsible for the execution in all aspects of culinary operations, including high quality menu creation and food preparation.

This person will also still be expected to recruit, train and schedule culinary employees, maintain appropriate inventory and supply levels, and labour control. The Dining Hall Chef must have a constant positive presence, and make sure that the Hotel Arts pillars and Student and Faculty expectations are always upheld.

Responsibilities will include, but are not limited to, the following:

  • Oversee all aspects of food preparation including menu planning, purchasing and cost control.
  • Ensure consistent food preparation of exciting and comforting food for students.
  • Maintain constant communication with the Executive Chef.
  • Work with Executive Chef to plan exciting, non-repetitive menus for students and faculty, while working with the appropriate food costs.
  • Champion the Hotel Arts safety culture at the SAIT site.
  • Provide training, coaching and mentorship for all staff in the back of house.
  • Motivate all staff members to maintain a positive staff experience.
  • Nurture relationships with employees, management, faculty, and students.
  • Evaluate all practices and processes to ensure efficiency and productivity of all back of house operations.
  • Work overtime when needed to ensure expectations are met.
  • Maintain great repour and relationship with vendors.
  • Execute Ad-hoc operational duties as needed.
  • Qualifications & Skills
  • 3 years’ previous successful experience in a large volume cafeteria/catering environment preferred.
  • Previous experience in executing short order cooking.
  • Interest and knowledge of global cuisine and flavors.
  • Up to date knowledge of culinary trends and back of house best practices.
  • Must show creativity, enthusiasm, have high energy levels and be self motivated.
  • Aware of proper basic nutrition expectations.
  • Strong communication skills.
  • Previous successful hands-on experience with training of new employees and building new teams.
  • Noticeable leadership skills in a hospitality environment and demonstrated ability to lead and direct a team in a positive influential manor.
  • Ability to remain clam and positive in high tempo, difficult stressful situation.
  • Must be able lift, pull, push up to 50 lbs. and stand for 8+ hours/day.
  • Be a strong team player, stepping in to assist when necessary.
  • Ability to fluently communicate in verbal and written English.
  • Valid Food Handing Safety & Sanitation Certificate required.
  • High School Diploma.
  • Proficient knowledge of Microsoft Office Suite (Exchange, Word, Excel).
  • Open and flexible availability for scheduling.
