Job title: Pastry Chef de Partie (Hotel Kitchen)
Job description: Reporting directly to the Executive Chef and Executive Sous Chef, the Pastry Chef De Partie is responsible for the production and oversight of all pastry and bakery items. Will monitor and adjust quality when necessary all dessert and pastry items both produced in house and outsourced product.
Responsibilities
- Produce all dessert product for Kitchen Buffet, Lounge and catering when required and possible
- Maintain quality of all bakery items throughout the hotel.
- In conjunction with the Executive Chef, creation of dessert menus, with corresponding menu costing, including promotional, 24/7, Plated Catering menus, guest room amenity’s and special occasions.
- Creation of standardized recipes with corresponding photographs to ensure a consistent high quality of food items and ensure that colleagues follow set standards.
- Responsible for the ordering of all pastry and dessert products following established ordering and requisition procedures
- Maintain up to date mise en place and ordering sheets according to current menus.
- Maintaining a working environment where creativity, continuous improvement and team involvement are standard.
- Promoting professional work habits and encouraging staff to act with all values (integrity, respect, teamwork empowerment) and recognize this trait in others and reward them appropriately. (You Rock and verbal recognition).
- Supporting a safe working environment by ensuring all staff are working safely and promoting the health and safety program.
- Education and training of colleagues in the kitchen.
- Monitor monthly preference reports and share results with culinary team at briefing meetings and post.
- Support Executive Chef in the CES action plan.
- Organizing weekly meeting with Executive Chef.
- To look out for the safety of yourself, co-workers and to follow all Health and Safety requirements in the workplace.
- Other duties as assigned.
Qualifications
- Valid journeyman’s papers or equivalent.
- Minimum of four years well rounded pastry experience in four or five diamond hotels.
- Current Food Safe certificate.
- Must hold a valid Canadian Work Permit
- Passionate about food and beverage and relentlessly committed to constant improvement and the pursuit of quality

The schedule for this position may vary and would require the ability to work shift work, late nights, weekends and holidays.
