What you will be doing:
Please note that this is not an exhaustive list of everything that needs to be done! Within the Fairmont family, our people always find new ways to look after the business, their guests, and their teammates. Within this, the key responsibilities for this position are:
- Manage and oversee the entire Notch8 operation, including In-Room Dining, and assist the Director of F&B.
- Consistently maintain the Fairmont service standards throughout Notch8 and IRD.
- Liaise with all departments to ensure clear and concise communication on all reports, functions and guest notes for the day.
- Maintain the highest levels of guest service and develop a rapport with both the hotel guests and the local clientele, meeting and greeting guests at the Restaurant, and handling guest complaints effectively and pleasantly.
- Lead the training and education of the service staff in products and service
- Assist Notch8 leaders in reaching and exceeding the goals for sales in the restaurant.
- Evaluate staff performance and create plans for improvement
- Estimate consumption, forecast requirements, and maintain inventory
- Control costs and minimize waste
- Ensure completion of all service shift opening/closing duties. Including Manager/Server/Bar.
- Ensure quality Food & Beverage service is delivered first while maintaining adherence to budgeted payroll and overhead costs.
- Conduct pre-meal informational briefing with staff so that all are knowledgeable about dishes, cooking methods, changes, menu items, specials, etc.
- Behave as a role model, communicate effectively with employees, act as a motivating influence, training all new team members.
- Supervise the alcoholic/non-alcoholic service in accordance with federal, state, local, and company regulations.
- Handle any guest incidents ensuring 100% guest satisfaction.
- Work as an active member of the management team. Creating professional relationships and active involvement with all hotel operations, including but not limited to; daily, and weekly management meetings, and support to all team members, including Manager on Duty Shifts
- All other duties and special projects as assigned
Your experience and skills include:
- Demonstrated passion for the Food and Beverage industry and knowledge of current trends
- Innovative and creative with a strong entrepreneurial spirit and a results-driven desire to exceed customer expectations in a luxury environment
- Highly energetic, strategic, and service-focused personality is essential, with at least 3 years’ management experience in a luxury food & beverage operation
- Ability to work a rotating and flexible schedule to meet business needs, including weekends, holidays, early mornings and late nights
- Demonstrated ability to drive revenues and profit without sacrificing colleague and customer experiences
- Proven ability in menu design, offerings, effective marketing plans, and on-line reputation management
- Previous experience working in a hotel and/or unionized environment a strong asset
- Extensive knowledge of spirits, wine, and beer required
- Previous bartending experience and cocktail creation an asset
- Previous point of sale system experience required
- Computer and Microsoft Office proficiency required
- Proven ability to build and maintain good relationships with all stakeholders
- Communicate thoughts, actions and opportunities clearly with strong networking skills
- Ability to lead by example, believe in a strong team culture and set the scene for high performance
- Highly responsible & reliable
- Ability to work well under pressure in a fast-paced environment
- Ability to work cohesively as part of a team
- Ability to focus attention on guest needs, remaining calm and courteous at all times
