Job title: Sous Chef
Job description: As a Sous Chef with Chateau Victoria Hotel & Suites for Vista 18 Restaurant + Lounge, you will be responsible for leading a well-established team, creating memorable dishes as our guests enjoy the beautifully and newly renovated dining room with spectacular views.
Working with the Chef de Cuisine on menu creation, execution, cost control and being an active presence on the floor. We are looking for a Sous Chef who is a team player and has a positive personality. If this sounds like you, we want to hear from you!
Vista 18 Restaurant + Lounge: Authentic – Local – Elevated
Reporting to: Chef de Cuisine, F&B Manager
Shift Requirements: Requires open availability to work days, evenings, weekends and holidays
Job Description:
Duties include (but are not limited to the following):
- Ensure the efficient operation of the kitchen, and all facets of the kitchen operations
- Prepare and cook a wide variety of foods, including complete meals, individual dishes and special items as instructed by the Chef de Cuisine
- Assist with the inventory processes, purchasing and food cost control
- Train, coach and lead the team
- Promote a strong commitment to providing the best possible experience for our guests and employees with professionalism
- Participate in onboarding activities of new employee
- Assume the support position and run the kitchen in the absence of the Chef de Cuisine
- Adhere to company policies and procedures
- Other duties as assigned
Physical requirements for the position include:
Must be able to stand and exert well-paced ability for up to 8 hours in length. Must be able to lift up
to 50 lbs. and push and pull carts and equipment on a regular and continuing basis. Must be able to
bend, stoop, squat and stretch to fulfill projects that need to be completed for daily operations.

Job Requirements/Qualifications:
- Must have a valid Food Safe level one certification or equivalent
- Minimum of 5 years’ culinary experience
- Demonstrated ability to work in a fast paced, multi-tasking, multi-functional team environment required
- Requires good communication skills, both verbal and written
- Proven ability to motivate, develop and retain employees
- Understanding of safe work practices and procedures to eliminate or reduce accident
- Experience managing in a union environment considered an asset
- Culinary Red Seal certified and Food Safe level two considered an asset
