For more than 80 years, the Hotel and Spa Mont Gabriel offers a warm and professional customer service, as well as an excellent table coming from our local market.

In collaboration with the Chef, the Sous Chef ensures the proper functioning of his kitchen.
Job description:
Collect the necessary information.
- The customers to be served.
- Allergies and dietary restrictions.
- Current events.
- Current occupation and the next few days.
Prepare the establishment according to the daily menus.
- Switch on and prepare the necessary equipment.
- Familiarize yourself with the daily task table and prepare the missing items.
- List the products needed to prepare menus.
Prepare the food
- Take the required food out of refrigerators, freezers and warehouses and make sure it is fresh.
- Rotate food.
- Prepare meats, fish and make portions.
- Cook meats and fish for main dishes.
- Prepare fruits and vegetables for serving.
- Prepare starches according to the menus.
- Prepare garnishes and decorations for the plates.
- Prepare sauces, vinaigrettes and coulis according to the menus.
- Assemble the plates according to orders, ensure a beautiful presentation while respecting the temperatures, deadlines and standards.
End of shift
- Undo the setting and put the food back in the refrigerators.
- Prepare the items for the next day.
- Report shortages or surpluses of merchandise to the executive chef.
- Clean surfaces and work equipment
Human ressources
- Check the presence of scheduled personnel.
- Make sure that the number of employees present is sufficient.
Assist the executive chef and fulfill his daily operational tasks during his absence
